Soup-er meals to make

Soup is probably one of the most easily made and versatile meals, whether you like it hot or cold.  Re:Nourish, the creators of the no nasties, completely vegan and gluten free soups, bring you some piping hot recipes to make your Re:Nourish soup even more of a soup-er star.

Re:Nourish Energy Boost Bowtie Pasta Salad

Made with fresh basil, lemon and plenty of peas, the Re:Nourish Energy Boost Bowtie Pasta Salad will give you all the green goodness with a great taste with only ten minutes preparation time.

What do you need

•   400g Bowtie pasta – cooked and cooled

•  1 bottle Re:Nourish Energy

•  100mg of fresh peas, blanched

•  1 bunch of asparagus, trimmed and blanched

•  100mg of sun-dried tomatoes, shredded

•  2 lemon, zested

•   ½ bunch basil

•  1 bunch watercress

  1. Placed the cooked pasta into a large mixing bowl and pour the bottle of Re:Nourish Energy and stir all together to coat the pasta.

2. To the pasta, add the peas, asparagus, sun dried tomatoes, lemon zest, basil and watercress.

3.  Mix everything together until the pasta and vegetable are well coated in the sauce.

4. Serve coast and garnish with asparagus tips and water cress shoots. 

Re:Nourish Immunity Summer Salad

The immunity is a power source of antioxidants, vitamins and minerals with the kale, spinach and turmeric ingredients Added to the colourful salad to give you a taste of the Mediterranean in every bite.

What you need

•  300mg brown cooked rice

•  1 bottle of Re:Nourish Immunity soup

•  ½ head of broccoli

•  100mg kale

•  50mg spinach

•  100mg radishes, quartered

•  ½ red pepper, diced

•  100mg cherry tomatoes, quartered

•  Nuts, seeds and crispy onions

1. Place the cooked brown rice into a large mixing bowl and pour over a Re:Nourish Immunity and mix thoroughly to coat the rice completely.

2. Roughly cut the broccoli, kale and spinach and add to the rice along with the radishes, red pepper and cherry tomatoes.

3. Mix the vegetables and rice together until the vegetables are evenly distributed and everything is coated in the Re:Nourish Immunity.

4. Spoon the rice salads into a bowl and garnish with the chopped nuts, toasted seeds, and crispy onions for the extra texture.

Re:Nourish Calm Gazpacho Relish

A sun-drenched summer afternoon captured in food form. A soothing, rich tomato soup with the added flair of passionfruit and the Gazpacho relish, will combat the stress of day-to-day life with a kick of Spanish flavours. 

What do you need

•  100mg cherry tomatoes

•  100mg watermelon

•  1 cucumber peeled

•  1 small red onion, peeled

•  1 yellow pepper

•   ¼ small chilli

•   ¼ bunch of basil, finely shredded

•  ¼ bunch mint, finelly shredded

•  40ml red wine vinegar

•  1 lemon, zest and juice

•  Olive oil

1. Cut the cherry tomatoes into quarters and finely dice the watermelon, cucumber, red onion, yellow people and chilli

2.  Add all the vegetables into a large mixing bowl and add the herbs, red wine vinegar, olive oil, lemon zest and juice.

3.  Give everything and good mix until all the vegetables are coated in the dressing. Serve relish over the top of a Re:Nourish Calm soup, served hot or cold.
