Diabetic Friendly Quinoa Dessert

As a diabetic, you don’t have to completely give up on your sweet tooth. There is an alternative! Use quinoa and enjoy the desserts that you previously sacrificed.

QUINOA: Is a highly nutritious whole grain food rich in proteins, vitamins, minerals and fiber. Quinoa has low glycemic index and is gluten free. These aspects of quinoa makes it one of the best grains for diabetes even for those people who have gluten intolerance. It is also one of the grains with highest protein levels.

Consider replacing rice, mash potatoes, or any starch heavy accompaniment with Quinoa, which serves as a significantly healthier alternative to these foods.

Here’s a diabetic-friendly recipe from India Gate Quinoa for all those who don’t want to compromise with the sweet dish post dinner.

CHOCOLATE COFFEE QUINOA CAKE

Ingredients: 

• 1 cup flour

• 1 cup quinoa

• 1 cup powdered sugar

• 1/3rd cup cocoa powder

• 1 tsp baking soda

• 1 tsp baking powder

• . tsp salt

• . cup oil

• . cup water

• 1/4th cup milk

• 1/4th cup curd

• 1 tsp vanilla extract

• 2 tsp coffee essence

Method:

• Put all dry ingredients in 1 bowl and mix

• Put all wet ingredients in another bowl and  make an emulsion mix.

• Now mix the wet and the dry ingredients  and mix with a beater for 2 mins.

• Pour into a greased mould and bake for  30-40 mins at 180 degrees.
